The Bourgogne appellation covers 384 communes in the departments of Yonne, Côte d'Or, Saône et Loire and Rhône. From the Chablis and Auxerrois regions in the north, through the Côte d'Or and Côte Chalonnaise to the Mâconnais region in the south, Burgundy wines come from a wide variety of terroirs. In the north, the wines are lively and fragrant, while they are more structured in the south.
After meticulous sorting in the winery, the grapes are completely destemmed, then vinified in vats for 10 days under temperature control to guarantee the finesse of the aromas and optimum diffusion of all the grape's compounds. The wine is then partially aged in oak barrels for 6 months to develop complexity, with a 5% proportion of new barrels providing the light woodiness.
